I make one with onions, garlic, mini sweet peppers, mushrooms, broccoli and/or zucchini, and tomatoes. Sauté that together with sage and/or thyme, salt, and pepper and then add eggs and spinach. Sometimes I eat it like that with avocado, cilantro, salsa, and/or sriracha on top and other times I wrap it in rice paper with those ingredients inside. It all depends on the flavors I'm going for.
