I made my own cauliflower rice tonight! Everyone else had white rice... I actually got a little giddy I loved it so much!!! Will definetly ne doing that again!!! 💞

Pics not great but adequately documents the cauliflower rice! Phone was almost dead so no flash & night time so none of the natural day light streaming in the windows... I highly recommend trying it to anyone who hasn't but is curious!

Orbity: Love the cauliflower rice - I make sure I add no water when cooking, it tastes better. I try different oils such as olive and sesame. Each time I change the spices slightly but usually include oregano, basil, salt, pepper, hot pepper flakes and garlic salt. Sometimes mix with sauteed mushrooms. go for it!

I love cauliflower rice!!! I use it to make fried 'rice' and Mexican 'rice'. Do you use a food processor or do you grate it by hand?

I luv it too. I made Mash Cauliflower on Sun & it's great. In a pinch Green Giant & Birdseye sell both frozen.

Britt1975: I'm definitely going to try it both of those ways! So excited! Unfortunately I don't have a food processor any more. I got rid of a lot of stuff when I moved into my RV... I did keep my beloved Vitamix... but that doesn't grate or rice... so I did grate by hand 😵 lol! It actually went fairly quickly & was so totally worth it!

gramymc: mashed is next! I have been eyeballing the frozen packs but decided to do it myself! Less expensive, no surprise ingredients & I have more control over the amount and end product!

I've heard that you could make mashed potatoes out of cauliflower. Let me know if you try this... like to know what it taste like? I am a big fan of potatoes and my decision to loose weight, I've cut back on potatoes. But it's hard when I see French fries...

Put the cauliflower in food processor and whip them up and add heavy cream and butter, S&P to taste, very yummy !!!!

Orbity - I was actually going to say that I've found that grating by hand is better for riced cauliflower. When I do mine in the food processor it's too fine. The recipes I use for fried and mexican rice are here: genaw.com/lowcarb/recipes.htm

I haven't ventured into the word of cauliflower rice but I'm majorly intrigued. I have done the mashed cauliflower and it blew my mind. Amazing.

my wife made Buffalo Cauliflower with blue cheese dressing, Baked cauliflower with hot wings sauce I could almost swear I was eating hot wings..Said she got it off of internet...Oh so yummy !!!

I sautée mine in butter with garlic, and add chicken broth. Simmer for 15 minutes or until most of the broth has been absorbed/evaporated and top with grated parmesan. It's like risotto without the rice!
