Just got back in from South Carolina (checking on my folks) and ate "cheese curds" for dinner at Highway 55 Burger & Fries. Couldn't find the "exact" food item (and the teenager couldn't give me nutritional facts on them), so I guess-timated and hopefully it won't impact Thursday's weigh in (much).

Cheese curds....mmmmhhhh. (In "DONUTS" voice.) If you change FS location setting to Canada, those deets should come right up for you. Sure hope you brought a bucket home, so you can experiment then tell us how to make keto poutine. (Hahah Keto Poutine is my next band's name.) Were they squeaky curds? ----Uh, yes, what Tbaygirl empathically said, because she wasn't salivating over cheese curds in all their permutations. How are your parents faring?

Sometimes you just have to eat something you might crave, and then you eat it, and then you move on..And our journey goes on. Never feel guilty about consuming something you don't normally eat..

I never had cheese curds. I'll have to google it. I don't even know what it looks like. But if it's cheese, it's protein and that's good. : )
Press on brother. You are an inspiration.

@chesgreen - I'm going, I'm going... drill sergeant! @Judyrose1997, @Tbaygirl, @cbliss16 - folks are fine - Dad's 82 and moves better than I do, Mom's having short-term memory challenges... the new norm, manageable. @T8U9 - I'll have to try the "squeaky" variety, I'm unfamiliar with those. @DO N OK - yeah, I was in a pinch and didn't want to do any direct breads or sweets. @mamacastro - thanks, that's sweet of you to say!

I suspect only visitors to Canada eat the poutine. It's a giant joke they very politely play on outsiders.

TBU9 - oh no baby we eat the poutine all the poutine and if we weren't so nice we would not even share with outsiders - the cheese curds are great but it is all about the gravy. Heavy sigh oh the gravy

50 Shades of Gravy, now there's a movie I would see. When BH first went LC, I used to make a dried-mushroom-based gravy, until gout ruled out that much concentrated mushroom. Maybe I can come up with a new version, maybe with glucomannan. Then, pour it over pork rinds and cheese curds ...
