After doing some extensive research and watching some educational documentaries, I switched to a mostly vegan diet a few months ago. I still can't believe I'm doing it because I used to make fun of vegans and always thought they were misguided. I didn't give it a second thought. Now I am one! The food I've been making is delicious and I don't feel deprived at all. I still make all my old recipes, but the ingredients have changed. I am still very aware that a vegan diet is not necessarily healthier on its own. You could live on Oreo cookies and Coca Cola and be totally justified in calling it vegan, but that doesn't mean it's healthy. I'm making informed food choices and taking vitamin supplements to make sure I'm not deficient in anything. I'm also watching my calories closely and dieting under the supervision of my doctor. I've been much healthier as a result. In addition to the weight I've lost, my latest blood test shows my blood sugar, cholesterol, and all other numbers have returned to normal, and even my breathing has improved. I used to use my rescue inhaler 6-8 times a day and used a steroid inhaler daily. My doctor has taken me off the steroid inhaler and I haven't used my rescue inhaler at all recently. I haven't even opened the last one I bought. I am now taking no medication at all and I'm still losing weight. I feel like I have a new life. :)
