Last night I indulged in some Mac and Cheese. Only it was no pasta! :) All Cauliflower!! I paired it with some chicken tenders. Only it wasn't your typical breading. It was Almond Flour and Crushed pork rinds. Low carb for the win!! #KetoLifestyle

Pork rinds. Avoided them since forever, but now it seems they can really bring a bit of fun back into life. Will have to try that soon, thanks!

spent 3 hours trying to find almond flour last weekend and failed to find it.

Darrencarter- I've found it in my local grocery in the baking section. Walmart. But I usually buy the big bag from Amazon. Almond flour can be expensive, it's worth buying in bulk.

Interesting Emily. I could use this as a substitute breeding for my diabetic husband. It goes down so fast. As long as it's nicely brown and you don't tell him I won't be found out. Thanks for the tip. 'Pork rinds'. Who'd have thunk it?

I love crushed pork rinds for 'breading'. They actually taste better than breadcrumbs!
