I made ice cream today using almond milk and Stevia and egg yolks. It came out pretty good. It seems greasy though. I have missed ice cream so it was an exceptable alternative.

Sounds good! I tried with avocado and chocolate. It came out looking like dog...you know. And didn't taste acceptable either. At least your version is workable! Maybe I'll try Leanne's version at healthfulpursuit dot com but without sweetener. She sure uses a lot of those!

I bought vanilla Breyers CarbSmart and it was amazing and creamy BUT having portion issues so back to CarbSmart ice cream bars.
