I'm liking the index cards w/meals and the freedom from having to log everything here. It's faster/easier for me to pick from a few standards, look up any additions, and move on. Down another pound this morning, so I'm back where I was a few days ago...one pound from goal.

We are having chili tonight for supper. I made a batch for me from beans, tomatoes, chicken TVP and seasonings. It made a nice size batch - I'm not sure if it's 4 or 5 servings (I'll measure it once it's cooled) but the whole pot is only 7.5 g. fat, so each serving will be plenty low for me to eat it. I'll be packing up the extra servings to freeze for future weeks. I have baked tortilla chips, cilantro and salsa to have as toppings - I think it will be tasty!

I guess we can comment on our own entries, right? That was some really good chili. It made four servings of just over 1 cup. I put a spoonful of salsa in it and had it with baked tortilla chips w/more salsa (the salsa had loads of cilantro, so I didn't add more). It was really great, and so simple to make. In case anyone would want the recipe: 1/2 c. dry chicken flavored tvp 1 c. water 1 can of 'chili ready' diced tomatoes (seasoned for chili, but fat free) 1 can seasoned beans for chili (also fat free) 2T. chili seasoning (I used 2T chili seasoning since the beans and tomatoes I had were both seasoned, but with plain beans/tomatoes, I would use 4T, I think.) Combine TVP and water in pot and simmer about 5-10 min. to help reconstitute tvp. Add chili seasoning, stir, add beans and tomatoes, stir and let simmer 10-15 minutes. 4 servings, 180 calories, 1.7 g. fat each. Very simple and tasty!
