Had a much better experience with zucchini noodles. The first time I tried them, I made them myself on a sprializer, and tried them with a fairly light sauce -- butter and garlic with shrimp -- and we all thought they were disgusting. For one thing, I just wasn't convinced that shrimp on a bed of zucchini was anything at all like having pasta. But I was willing to try again: This time, I bought the zucchini spirals from Veggie Noodle Co. and followed the directions to sautee them in a little olive oil with season salt. And I used them with my chicken chorizo sauce -- a heavy sauce that really coated the "noodles" so that it wasn't like having, well, zucchini. I was happy enough with the outcome that now I'm going to try to do pesto and shrimp. But I'm suspicious that the keys are first -- sauteeing the zucchini just to al dente texture and using a heavy tomato sauce that totally coats the zucchini. Then you have this noodly texture with sauce that is much more like spaghetti with meat sauce than it is zucchini with tomatoes. I'm open to any suggestions anyone has who's had more experience than I have with this food. I really do like the idea of being able to have "spaghetti" and meat sauce without having to skip carbs for 3 days.

I don't know about the zucchini noodles, but I tried using egg plant in my dish for a mock tomato/spaghetti parmigiana. I looked up a recipe that said to cut the egg plant up in 1/4 inch width and then fry in oil. It was okay, but too oily. The oil soaked into the vegetable. Next time I am going to brush olive oil on the egg plant and broil or bake on a high heat in the oven. I want a crispy top on the slices. Or if oil doesn't get the result I want, I will try brushing on butter. Today I used a wedge/thick slice of cabbage and cooked it in a nonstick pan with a bit of water, so the bottom of the cabbage was browned but the cabbage was al dente. Used a 1/4 cup of spaghetti sauce, 4 oz of ground turkey seasoned with small amount of onion and green pepper, two oz of mozzarella cheese. It was good. Spaghetti is my favorite meal, so I am always trying make a low carb version.

ginger dog - thank you for the great suggestion wiht the cabbage. I make a fantastic eggplant parmesan bake that doesn't involve any frying of the eggplant. If you would like the recipe message me. I make it in a giant lasagna pan, and then I cut it into portions and freeze it. It's really delicious.

I've found that the taste and texture is much better when I lay them out on paper towels, sprinkle with a little salt, then cover them with paper towels to get a lot of the moisture out.

use pasta zero shirataki noodles they are so good & you don't even know they aren't noodles but you have to clean them right.

Ooo, I make my own with the spiralizer, but try it with some homemade meat sauce! No, it's isn't spaghetti, but dang, it sure is good eating! ;-)
