It's not crazy, its delicious! We have "brinner" at least once a week with all the trimmings on the side...fried tomatoes...fried mushrooms..., sometimes ratatouille. Enjoy!

Dinner is normally around 7 pm until 9 pm, if I have a snack or still consuming drinks. Then after 9 pm up until the next day 7 pm I don't eat at all. So 22 hours of fasting & 2 hours of feeding.

Hi Yolanda..I cook from my head (and heart) so can't give specific quantities...but here goes...a good glug of olive oil in hot wok...once warm add a half a generous sized onion chopped up and braise till caramelized...after that add equal quantities of diced tomatoe, baby marrow, bell peppers.....egg plant...raw fresh minced garlic to your taste, probably 2 fat cloves chopped up...Start off by stir frying on high heat for about 5 minutes and then reduce heat for about 15 minutes (with lid on pan) so that it creates a lovely reduction of deliciousness where it all "comes together". Dont forget to add some pink salt and coarse ground black pepper. I also use Ina Paarman Cajun Spice as it gives it a nice "zing" This particular spice also enhances aroma and lifts flavours..If this is not your "thing" by all means add a dash of Worcester Sauce or even some Balsamic vinegar. You can't really bugger up with ratatouille lol... Just before serving add some finely chopped fresh basil, thyme or origanum. As you prefer :) Enjoy!
