Hi everyone! Just figured out how to do comments :)
Yes, it's quinoa! I got tired of plain quinoa so I chopped a lot of herbs and added them, parsley, cilantro and dill. And I added currants (little raisins). As well as some mustard, red wine vinegar, pomegranate molasses, and salt and pepper. Oh and then I realized it needed a little oil (tried not to use any but it needed it) so I added some hazelnut oil I have in my fridge. It's kind of a tabbouleh but with quinoa I guess. I invented it, so no inspiration link to a recipe sorry.
I suggest you just try to add herbs to any grain for flavor!
p.s. chicken is Costco - just portioned it so I didn't over do it!

I've never been fond of quinoa, but you make it sound really appetizing. I'll have to try it with loads of herbs next time.
