I think I'll name these Shook Shrimp Tacos!

I sautéed a red onion with a bit of avocado oil, a smidge of salt and set that aside.

I chopped one tomato, gave it a bath with some lime juice, and set aside.

Seasoned the shrimp with pepper, paprika, and parsley. NO SALT! Sauté with a bit of avocado oil and when they are almost cooked throw in some finely chopped fresh garlic and add a splash of lime juice. Set aside.....

This is the part I know isn't the best but... on a SMOKING HOT pan I heat up two small flour tortillas (next time definitely making them whole wheat tortillas) and plate them, then build your taco!

Tortilla, shrimp, tomatoes, then onion. Finish it all off with another lime juice bath and ENJOY!

Key Word... ENJOY! I am not depriving myself of delicious food because if I do then I end up binging afterwards. I am however controlling how much I eat and when I eat it..BABY STEPS!

you can buy mama lupe low carb tortillas and they are actually excellent and lower calories and much lower carbs

Cheleletourneau thanks for the suggestion, I'll be sure to check those out! I usually do not eat tortillas of any kind but this is what was on hand at my fathers house which is where I cooked this lunch.

DDITTO yea I'm not doing low carb, I've tried that before and I end up binging like a mad woman so I just pace myself and don't deprive myself from carbs. Just be more conscious of them! :)

Mission has or had some 6 gram white tortillas. They are/were very good for an occasional treat. I would try this recipe with them.

Love your attitude - you have it right: everything in moderation. It's the extremes that kill us -- physically or emotionally. My goal is to eat as healthy as I can but not go to extremes either way (I have done both, each one ended up in disaster and not healthy in any way). I no longer beat myself up for extra carbs or even skipping a meal if my body does not feel hungry. As a result, I am losing weight at a nice pace and all my blood work is now normal whereas before it was bad with a capital B. This is what is right for me. Each of us has to find their own level.

Naomie hall, I would have totally preferred corn tortillas but I was at my dads house and this was all he had. As far as cilantro goes, I'm one of those people who's taste buds process that it taste like soap.

Tiane, this sounds so delish! Give me shrimp, lime and tomatoes and I'm there! How many shrimp did you use? One of my faves is shrimp ceviche but I must watch the sodium especially. Also, I had to laugh when you said cilantro tasted like soap! I use to not like it at all but since having it in low doses in the ceviche and homemade salsa I'm enjoying it! This is a shock as I never thought I would!

I try and stay away from shellfish, but those tacos look really good and sounds like a nutritious meal! P.s. I definitely agree with the whole wheat tacos...I think Food for Life sells sprouted wheat tortilla's :)
