East Texas Style Barbecue, according to me; rub minimally with kosher salt, cracked black pepper, and garlic powder then slow smoke over Pecan wood. Same basic formula regardless of meat.

Do you have a smoker or smoke on a grill? If smoker, any trusted model you can recommend? We were thinking of buying one. We smoke fish on a grill, but don't think it will work with meat.
