An amazing sauce that fits many plans. An Indian riatta: basically chopped cucumbers in plain yogurt, let it sit for awhile to increase the flavor. Add some dill and a touch of salt to makes it even better. Good on vegetarian dishes, meats, veggies, and keeps for several days in the frig. Also only takes a minute to make.

I believe foods that taste amazing satisfy one and you are able to stick to your plan easily.

Dinner tonight a lentil and walnut loaf adapted from Laurel's Kitchen, topped with riatta with dill, and some steamed cauliflower with a bit of butter. YUM so much better than fast food. I have lentil loaf left for lunches and a quick dinner later in the week.

I plan leftovers for lunches. I also have a veggie and bean soup that I made a couple days ago in the frig that will be frozen tomorrow in portions for lunches or dinners if needed. I'm making a chopped salad tonight that will give me a veggie salad and will also be good for several days, it's better after sitting at least a day in the frig. Tomorrow I will make a cabbage dish for dinner that will also be geared for planned leftovers.

Planning ahead and prepping some makes for good meals quickly on those busy days. Take your lunch to work. I find if I miss the prep and pre planning I end up not eating as well. It's just me so planning also saves money and cuts down on wasting food.

Yum... I need to find a lentil loaf recipe. I love raita also - a variation I make has a pinch of garam masala and some diced tomatoes in with the yogurt and cucumbers.

No food photos-- the bad photos here are grossing me out, I love food too much. "Z's Mama I'll be glad to share the recipe, your riatta variation sounds yummy. I thought about putting some type of masala in it. I usually keep several types on hand, but didn't since I had dill ready for picking in my garden, was wishing for a fresh garden cucumber. Glen you can come for lunch. ;) The calorie count isn't bad on the lentil loaf. I'll add it in the next post. I'll have to add the carrots and mushrooms I put in it to my cookbook. It had been turning out a bit drier that I like so added some veggies and it worked. Laurel's Kitchen is for me is a go-to vegetarian cookbook that was written in the early 70's shortly after Diet for a Small Planet. The other handy ones are a more modern book Vegetable Planet and Matt Bittman's How to Cook Everything Vegetarian -900 some pages as it has ingredients that were not readily available years ago. Laurel's Kitchen can be found often @ half price books. I was so excited when I found the one I have several years ago, I had bought this book when it first came out and it is either still at my ex's or lost in a flooded storage space with lots of other books years ago.

About 360 calories per serving not counting the riatta. Add veggie or a salad and you have a filling nutritious meal that comes in under 500 calories. A plus lots of fiber and complementary proteins of lentils, nuts, seeds, grains then add the eggs; yogurt if you use riatta.

The riatta sounds great, and I really like the idea of planned leftovers -- especially since I'm cooking for one.

Laughing as I've spelled it totally wrong raita is what it should be. I just spelled it phonetically. Oh well. I also cook for one and it's really hard. I find it handy to have easy meals available during the week for lunches and dinners. With my job I now work overtime a lot so come home hungry. A glass of tomato juice or buttermilk seems to tide me over until I can put a quick dinner together and stops the urge to nibble on everything I can find.

Sounds like you are motivated to be back on track. I find doing small "Do-able" things each week, or day, turn those habits into automatic behaviours much easier. For example, this past week I decided to move my "stop eating" time up from 7:30 to 7 pm. I mostly eat by 7 pm anyway but it takes away my wiggle room mind set. Keep up the good work.
