Dear Broccoli:

I am sorry to say this but you have ruined my velvety cheese curry sauce for the last time. You are no longer welcome in my casseroles from this day forward.

LOL! Broccoli has found a new home.. My sauce is pretty easy actually. 1 TBS butter 1 Cup heavy cream 1 small clove garlic 1/4 tsp curry powder (or to taste) 1 cup shredded Parmesan cheese (or sometimes I use the Kraft 4 cheese blend or add cheddar) 1 egg yolk - optional I melt the butter and garlic over medium heat - add the cream - wait until it starts to simmer. Add spices and slowly add the egg yolk while whisking so it doesn't cook too fast - add the cheese blend and whisk constantly until the cheese is melted and smooth. Simmer for 3 - 5 mins and it is done! I find that the Parmesan cheese is VERY difficult to get it to melt smoothly and sometimes it is a little clumpy - any chefs out there with pointers would be greatly appreciated. As you can tell I am not a professional cook so I apologize if my recipe is lacking clear direction. Cheers!
