I just recently tried cauliflower " fried rice"...it was truly amazing! Although I could eat it just as you posted it...YUM!

Still haven't mastered the 'steak' but simply roasted in little florets is just as good :)

@iulani,I haven't tried cauliflower rice yet. I need to find a recipe for the fried rice :) I have used it for pizza crust and it was delicious.

@schmetterlinge34, I always end up with some roasted florets when I make the steaks. Sometimes the cauliflower doesn't want to stay together on the end pieces

I love Sriracha sauce but it spikes my glucose so I have been avoiding it. Wonder if possibly it is just the brand I am using? would anyone know per chance?

btw I love to do cabbage steaks this way too but I only eat 1/2 a cup of cabbage at a meal because I am so of a carb sensitive type 2 diabetic.

My husband has type 2, and neither the cauliflower or the Sriracha cause a spike in his BS

If you hand grate or my vita mix worked well... or a food processor...the cali into rice sized pieces, just use as you would regular rice. I sauteed it in sesame oil for 5 min, added fresh peas, green onion and salt and pepper. Cooked meat and egg can be added as well. I found the basic recipe online...good luck! It was excellent!

I think I might steal your recipe for the dip! I'm a little burned out on cauliflower. I ruined my taste buds with a jacked up batch of coconut cauliflower curry that turned out God awful. But, I'm thinking some roasted zucchini sticks would go great with the dip.
