Had a busy day. I've spent over 3 hours in the kitchen - my back is creasing me now lol. This morning I stuffed a couple of chicken breasts for Shirley and I and sorted out some recipes, which I passed to Tony and asked him to pick 4.

I've only made one of those so far - a courgette and aubergine coconut curry - but I've made the filling for a mushroom, cabbage, leek & potato pie, and the filling for cheese, onion and potato pie. None of which I'll be eating.

I'm going to put a piece of Ox heart and a lamb's heart in the slow cooker later and cook them with some veg. I can't remember the last time I had heart, I used to like it, but I'll have to see. I've also got some pig's liver and casserole beef out of the freezer and in the fridge for this week too.

When you're standing a long time your spine compresses. Bend over and hang your arms down a few seconds. You will feel your spine extend and it feels a lot better when you stand back up. :-)

Sounds great Minitata. Those pies especially. I did a batch of sausage rolls for the OH's lunches and it was touch and go whether I sneaked the 16th one (3 x 5 for his weekdays). I resisted. What did you stuff the chicken breasts with? I like a cheesy stuffing but the OH can't eat cheese so I generally go with a chorizo and veg stuffing. I hope your back recovers quickly - it must be a nightmare for you being in a wheelchair and suffering back pain. Take care!

Well done for all the effort.. when my back is bad, I put a throw or blanket in the tumble or on a radiator and wrap myself in it, like a massive heat pack , hope it eases up soon

I've done a little tai-chi and taken my tablets. It'll ease up. I just stuffed them with butter, herbs, garlic (just for me) a little coconut and a tad of cream cheese. They were nice. Shirley had some of Tony's tamale pie as veg too. When she'd finished it she said 'I don't know what I've eaten, but it was very nice.' So that was good too.

They sound lovely. Great that you've had good feedback too - sometimes people forget to say when you've made them something nice.

Phooka I don't use the wheelchair in the house, just move slowly and sit a lot. In the kitchen I have a stool with a revolving seat - very handy - and a husband who, luckily, is happy to fetch and carry and peel and grate.

Ooooh, I like the idea of a stool with a revolving seat in the kitchen! I really have to try some of the low carb recipes rather than just eating everything plain. I haven't done any baking yet, except for low carb meatloaf, which was better than any other I have made and was husband-approved. I did buy almond flour, but haven't used it yet. I like your ambition!

I know what you mean about the recipes. I get lazy and just eat meat. I've never had meatloaf - is the recipe on your page? - I may have to try it.
