so this morning only a 0.4 lb. loss but at least its a loss and not gain. i tried the asparagus frittata idea a member talked about on his "frittata Friday" blog post (sorry i don't remember his name). to be honest it sounded good in his post, but once i actually opened the can of asparagus, i started to have doubts as to whether or not this veggie was intended to be a breakfast item. i pushed through my doubts and continued with the asparagus and added the following: onion, bell pepper, spinach, Roma tomatoes, mushrooms and egg whites. once cooked i topped it with some blended Rotel tomatoes as salsa and......BOOM it was awesome! i am now convinced that asparagus is good for breakfast!

Mrs. Dash is my saviour! They have so many flavor combos. I also put paprika (helps with metabolism) onion and garlic powder in jyst about everything lol. Im a salt-a-holic which is terrible so my goal until Easter is to ween myself off. The frittata is amazing. Basically you jyst sautee your veggies in a crooning pan then whip up egg whites and pour over veggies. Turn down heat to simmer and put a lid on it. Some people add cheese on top but i opt for the lower calorie version and put blended Rotel on top. If u do add cheese, swiss is a lower sodium/calorie option. I like the frittata because once its cooked you can slice like a pie in equal potions then stack in a container for the next days. That way if you one total calories of everything, you just divide by the # of slices you cut. Makes calorie counting easier

I love fresh asparagus! I think it's better than canned.

Just for the record, I generally make my frittatas for dinner, on Fridays, but cut them in half so I can have the other half for breakfast on Sunday morning, with a cup of green tea; that way I can have a quick and easy breakfast, and thereby avoid any temptations that may be at church, such as the two boxes of doughnuts that happened to be there yesterday morning. It helps me to stay on track.
