This weekend was a good one. I got through it just fine and I have a good start on today. tonight I am making meat loaf. I want to have a good hot low-carb meal at the end of the day. Tomorrow is going to be tough. We will go out to eat for Valentines Day. I am planning for it as I am typing this. I'll have lots of salad to fill me up for sure.

I haven't made meatloaf because I can't use the usual soaked breadcrumbs or stale bread soaked in milk to bind the loaf. What do you use?

I use cracker crumbs, 6 soda crackers(saltines)equal 12 carbs, but it is 1 1/2 lbs of ground beef and serves 4-6 people. I use 2 eggs to hold it together.

Could you use crushed pork rinds in place of the bread? Just a thought.

Why salad? If you're doing low carb, have your proteins along with it. Most restaurants have salad dressings that are not low carb, so be careful with those.

Flaxseed already ground, really good in meatballs also.

I've used pork rinds in meatloaf. No one even noticed the difference...

Went to my dinner today! It was so yummy! probably had at least 60 carbs but oh so good!!! I did skip lunch for it!! LOL!
