I've been watching a travel vlogger, an American based in Thailand, for about a year. He basically travels the world to eat, mostly street food. It all looks so good! A lot of his vlogs recently have been, of course, Thai food. So I decided to try to come up with a version of a Thai soup. It came out really good!!! Chicken broth, coconut milk, fish sauce, lemon juice, cilantro, and a few other seasonings. I had some leftover pork carnitas that were really dry, so I added that....but ended up not eating the meat because it was just stringy. But it did add a lot of flavor to the broth. I felt the need for soup because I put MCT oil in my coffee again yesterday morning, and once again, it cleaned out my digestive tract. Have you ever had diarrhea so bad that it runs almost clear??? I won't add MCT oil to my coffee today, because I have to work, and can't be running to the bathroom every 10 minutes. I don't know how long it takes for a body to adapt to MCT, but I hope it's not too long.

Another good drop - I can't keep up with you, Kes! Are you sure it's the MCT? Maybe you just have a stomach upset.

Thanks, Doobs. Yes..I'm positive it's the MCT. It only happens on the days I use it, AND it happens every time. This weekend, I'll try it again, but cut the amount, to see if that helps.

Decided to do a bit of research on this. I didn't realise it was different to coconut oil, and can indeed cause diarrhea. Hopefully, cutting the amount will work for you. Have a good day, Kes!

I made a similar Thai soup with Shirataki noodles! It's so tasty and satisfying. Well done on your weight loss. I've added some MCT oil today as well...luckily, I'm working from home today :-) Hope it does the trick. I've taken 2 cleansing pills too.

My son made us Vietnamese PHO on Sunday and it was AMAZING! I am definitely making it this weekend!!!!!! Have a good weekend Kes :)

I just returned from a trip to Vietnam. The street food is pretty great. Lots of roast pork, duck, fresh fruits. And their baguettes are wonderful. I came home weighing ine pound less than I left.

Thanks, friends. @Fatty, I thought about putting Shirataki noodles in it. I may do that with what's left. Between the MCT and the cleansing pills, you'd better stay close to the bathroom! @Iulani, I LOVE pho! @Brian, The vlogger (Mark Wiens) has done quite a few videos on Vietnamese street food. The Banh Mi look incredible, as do their soups and stews.

@April, fish sauce is a very strange product. It smells like dirty feet, but the flavor is what makes a lot of Asian food taste "right". It took me a while to learn to use it correctly. A little bit goes a long way! In Thai cooking, they use it to add salty flavor to a dish, and what the Japanese call "Umami". Tonight, I'm sauteing marinated chicken in butter, and adding it to the broth, along with Shiratake noodles. It should be spectacular!

Hmmm, cut down the MCT to maybe 1/2 teaspoon or teaspoon? Not sure how much you are using. When I use it, it is a measured tablespoon but I worked up to it. Good luck, Kes
