A few nights ago I baked a ham, not an unusual thing, but my wife suggested I use ginger, garlic, salt, and pepper instead of my usual Smokehouse Maple seasoning. I don't know why it shocked me how extremely tasty the garlic and ginger made the ham, those are pretty stock spices in Chinese cooking, but I was floored by how good it really was. Anyone looking for a cheap way to stick to low-carb consider Pork. I'm not talking about the pricey chops, look for the vacuum packed pork shoulders(aka Boston Butt),and hams, I bought a ten pound pork shoulder this morning for $1/pound at HEB, got it in the oven with some ginger and garlic and will eat on that thing for a week, put some low-starch vegetables on the side like green beans, or side salad, or some sliced avocado, low carb and delicioso.

Hey, I've been thinking about you. My brother got me a fancy electric smoker for Christmas because I said I wanted to make my own bacon. Bacon turned out great, I also did a Beef Brisket that was delightful. Now a want to try a Pork Shoulder, because my friend Phil, on the internet, says they are the bomb. Do you have a recipe you follow for the rub? I assume we are talking ground ginger, granulated garlic, and salt, but are you using black pepper, white pepper, cayenne or something else? About what ratio do you use? equal parts of each?

The absolute best rub for a pork shoulder is McCormick's Smokehouse Maple grill mates, especially if you're using a smoker. If you can get pecan wood for your smoker, use that, it's milder than Hickory. For the ginger/garlic thing, I used pink Himalayan sea salt, a mix of black, red, white, and pink peppercorns, and equal parts garlic and ginger.

I love pork of all cuts and preps. I like it better than beef or chicken either one. Well, except for a good rare steak.

I discovered boneless smoked ham hocks in vacuum packed bags, they're about fifty cents more per pound, but totally freaking worth it.

Interesting, Phil! Last night, I had Pork Hocks, which look like the femur of a pig. Absolutely, huge bones, and the meat falls right off the bone. So delicious put in a rice mix. So much food, I brought most of it home. We go to one restaurant in Long Beach to get it. Enrique's Mexican Food. Funny, they don't even list it on the menu because it is in such demand. Had that with Creme Brûlée Cheesecake, that was "off the charts"!

Hocks are awesome greasy goodness. Smoked pork is one of the pleasures in life.

I smoke pork butts in my PBC taking about 12 hours and it is mighty tasty. Eating a pile of pulled pork when smoked low and slow like that is pure heaven. Be sure to dry brine it over night the night before and, of course, don't use a salted rub when you dry brine it.

Yes, HEB is an awesome place. I get my pork butts and my briskets there and sometimes my pork ribs (or at Costco). Smoking meat low and slow is the only way to go. Thanks for rekindling ideas about this @Phil.

@Mom you're funny. HEB is a regional super supermarket in the Texas market, based out of San Antonio. It's similar to Publix in Florida but better.

We haven't had HEB very long, the one in Lufkin has only been there six or seven years, but it's my main grocery store. I don't go to Nacogdoches more than a couple of times a year since I finished my graduate degrees at SFASU, they've got Kroger which would give HEB a run for it's money, but not in the meat market. La Michocana has good deals on meat, too. Now I'm hungry again.
