As a single guy I'm constantly looking for:
1) foods that fit the low carb/hi-protein needs
2) using as few dishes as possible for easier clean up.

here's one thing I do...
local supermarket deli...grab a rotisserie chicken, skin it, pulling apart save it in the fridge (get rid of the fat and all the salt that is in the skin)then as I need it take about 4 oz dice it fine, set aside (on dinner plate)...in a microwave bowel measure out some frozen veggie (cover with water, nuke it to warm but not "cooked" (you see why in a bit), drain chop on dinner plate, set aside (yes the meat is there too...in microwave bowel crack a couple/three eggs, beat, spice and add veggies, meat and mix..nuke it all until the eggs are cooked (was is already cooked, veggie too this just 'finishes it')as it cooks chop a salad (on same dinner plate, shove it to the side)when egg mix is done dump it next to salad, top with cheese dressing (both egg and salad)...

result is my usual, leaving one dinner plate and one microwave bowel to clean up (knife, fork & spoon, glass of course too)...

such is the life of a solo...

PS..BTW, one of those chicken can get me through a work week's worth of dinners

My husband is gone for work during the week. I'm right there with ya about ease and least amount of dirty dishes! Local grocery store I go to picks the chicken off the bone of the rotisserie chickens they don't sell, packages it up, and sells it by the pound. I love it, it tastes good, and is EASY! I've been known to eat chicken salad all week...

I suppose I could reduce the dishes more by eating out of the microwave bowel, but I've started mixing the egg goop (after cooking it) on top of the salad salad with shredded cheese and dressing on top (end up mixing it as I eat it down anyway...)

Sounds yummy! I pick up one of those chickens about once a week and share it with my little dog. She gets mighty testy if I don't share. lol

What kind of bird? I used to take care of the macaws and cockatoos at my uncles pet store. We had one cockatoo that was such a brat, I had to take him with me when I got transferred to another store. I loved that bird. He would scream my name across the store. :-)

severe macaw, (ara severa severa) male, 16 years old, been with me since he was 4 months old, if it weren't for him, I'd be filling my alone time with stuffing my face. as it is I have to be aware of healthy foods that I can share because he won't let me eat with him...(good thing he loves scrambled eggs)

Awwww I miss hanging out with big birds. They're so much fun. My uncle's store is in CA and I'm in FL so I can't even go visit. We had a scarlet macaw who would hang out with me at the cash register. I'd put her down on one side of the counter, ring up the customer, the drawer would pop open, and she'd run across the counter and start pulling bills out of the register. It was so funny. She did it every time! LOL

This guy is handful enough! people don't realize how much effort/care is needed for parrots of any size. I tell people that say to me how they'd like to get a parrot to stick with a dog or cat, parrots are a whole different experience that unless your willing to put in the effort isn't ethical for both you and the bird. That being said, I can't imagine NOT having him around...it would be like losing a leg or arm.

Be careful of the rotisserie chickens some have brown sugar sprayed on to help browning and dextrose in the chicken to plump it up. Your better off roasting your own - the smell is amazing too.

You tell it bad jokes and make fun of it....at least that's what they do to celebs....to roast them

It's not hard. They usually come with directions - look for one's with lower sodium if you're watching that. I just remove the bag of gibblets inside it, put it in a baking dish on a rack, brush it with melted butter, add salt and pepper. Bake at 350 for an hour or so. It's done if it runs clear when you stick the thigh with a fork. If it runs bloody it's not done. You do have to wash the pan though - sorry! You can omit salt and play around with spices obviously. You can do this!
