Practice...

I enjoyed yesterday to practice what I learned at the lard making class. It turned out pretty well, snow-white, and it does not smell strong.
I realized I don't have to make lard in order to get some pork skins. *haha* That is a completely different story. Since I bought the fatback skin-on I dehydrated it and will fry it. I really hope it works out and it gets all fluffy.
I will ask the farmer if it is possible to just purchase the skin since they sell the fatback without skin as well. That part has to go somewhere, right?

Now preparing for the next 4 months - well, I guess I cannot really do that in every way but mentally.
I am taking an EMT class. That means class every Monday and Thursday from 6-10pm, once a month a Saturday 8am-4pm. Besides that there needs to be time for studying and I am on call as an EMR every Tuesday. It is not necessarily said that I need to go out but....
Additionally there will be a business trip but I am looking forward to it. One week Miami in February, what more do I want *lol* Even if it means conference room most of the time, there will be the arrival day - I will be there early and have the whole day. And then there are the evenings....

Let's see how I manage the time coming food-wise and wish me luck that I don't fall off the wagon.

Thanks Gwenn - I just made pork-skins and they came out great. They will be my snacks for the class :-). Now the very last part, making some onion-lard (Zwiebelschmalz) for my daughter.

Looks great! My lard always came out a bit burned and had an off taste until I started ladling it out as it melted.

probably a dumb question but WHY would you want to eat lard?? isn't that the worst possible type of fat? full of saturated fats and calories?? or am I missing something?

Lard is good for you and vegetable oils are bad for you. Go figure.
