Nearly done with our Beefalo Stew...and working on our next meal. It was going to be the exact recipe from The Pink Lantern's Crustless Spinach Quiche...however, this is me cooking we are talking about.

No matter how well I plan, I always have one or two items just off from the original recipe (or so it seems!).

So what was supposed to be 1 cup of fat free cottage cheese is now 1 cup of Cabot Greek Yogurt, plain. And what was to be 3 eggs, is now 6 eggs (due to the extra creaminess that the yogurt will provide...just didn't think that would work with 3 eggs). And I forgot we bought 8 oz of mushrooms last week, so that got added too. Everything else is according to the recipe. Shaking my head. 45 minutes later...it smells soooooo good!!!

Last night's reading material while running on elliptical was Judas Child. So I found that the book is old enough that the binding is stretched prior to my reading it and it will stay flat so I can use my arms on the elliptical. Yeah! Chapter 3 was really, really long....to the tune of 39 minutes of straight moderate/high running! Cool down was till the conclusion of the time goal of 45 minutes. Felt like $1,000,000 dollars once I stepped off and headed straight for the shower!
