Today I'm back on Friday's weigh-in weight... Yay for me. Tonight I'm including resistant starch potatoes in my meal, let's see what happens tomorrow!

Did you refrigerate them overnight? I forgot to do mine so I'm boiling them now and going to put in the freezer then in the fridge :D

It's in the fridge at the mo, until I get back from work tonight. I cooked them this morning, I read up before I cooked them, and as far as I could see, you only need to cool them down, and then not heat back up above 130 degr F (55 degr C), but, let's see.

From what I read, the longer it cools then the more resistant starch will be created so most people boil the potatoes a day before and leave to cool for 24 hours. I'm sure even cooling for 6 or more hours will make a difference :)

Yeah, I figured that as well, it'll be more than 12 at least. If tonight's doesn't affect my weight too much, as I've seen with carbs in the past, then I will go for 24 hours. TBH, I was just too lazy last night to cook them!

What is the thing about freezing carbs? Does it have an impact on weight, please share...

Apparently yeah. I'm still checking out the theory, but just google "resistant carbs" & you'll get the info.

Google "Resistant Starch". If their science is correct then it really is awesome. From my experience so far it seems legit. I would never usually eat potatoes on a low carb dab but I've done so as recommended in the articles and I have still seen a drop on the scale. Potatoes can really fill you up solid!
