Hermiones Mom's Journal, 13 August 2016

OK -- I'm not fooling myself. I know I'm eating way more calories and carbs than I should, and even if the net is more calories burned than consumed, I have to get back on track. But I figured out today that a big part of the problem is that I've reached that "no more hot food" stage that I get into when it's been too hot for too long. In days past, I would have eaten a pint of Ben & Jerry's for dinner, but I no longer do that sort of ting, so I'm ending up eating a lot of carby things that aren't necessarily unhealthy -- peaches, grapefruit -- but are way too many carbs. And by the time you satisfy your hunger, you've also eaten too many calories. This week I will stock up on salad veggies and will make egg salad and tuna salad. Gotta find ways to stay full without hot food! And I'll keep my fingers crossed that it cools off soon.

There are worse things to eat than peaches and grapefruit unless you are eating several of them in a day. On hot days I usually do salad + one egg + tablespoon homemade mayo + toasted pine nuts. Easy and peasy. That's usually dinner. At least you didn't turn to a pint of Ben & Jerry's.

One of my favs is cream cheese or a good high fat greek yogurt. - nothing wrong with chopping up a fresh peach into some yogurt! I might just do that this morning. The peaches are delicious here - just had our annual peach festival yesterday!

There are very few local peaches this year -- but the latest batch of California yellows are very good, and the nectarines have been delicious. Engeland -- it never occurred to me to use pine nuts with eggs. I made egg salad today with veggies -- but now I'm thinking of adding some pine nuts. I have been using a lot of pumpkin seeds because I accidentally bouht them twice. Thanks for all the suggetions everyone.

Fresh berries are fairly low carb, they're still in season in California. Ymmm

Fruit smoothies have become a favorite of mine. Pinterest has a ton of super yummy recipes.

Chicken salad is good, too. I like to make mine with pecans and put a scoop on top of a tossed green salad with avocados! Hmmm, this was not on menu for tonight, but I think it just might be now! And I completely agreed about no hot meals when the weather is so hot!

Summer fruit is a real temptation, cold and wet. I try to avoid it, but not always successful. I went blueberry picking on Friday in 90 + temps. Couldn't resist the little buggers.

@HM.......Pine nuts aren't eaten enough and I am thinking that's because they are expensive, but a little amount is all that is needed for a serving. I eat them toasted and untoasted in my salad. It only takes a few minutes to toast them. Btw the egg in the salad is boiled.

I agree - if you are doing low carb of any type, the summer fruits (and ice cream) all scream at me, too. I had to do my "cut" this week so no additional fruits, wine or ice cream...even the small amount I was eating!

I eat low-glycemic fruits all the time, including berries, cantaloupe and honeydew. For most of the past two years, that's all the fruit I've eaten because I developed IBS-A, and I have to eat low-FODMAP to keep the IBS under control. Now I have an added complication: The combination of the IBS (which causes dehydration) and the low-FODMAP diet (which, by accident, is high oxalate) causes kidney stones! So I am really doing a complicated balancing act -- I can continue to eat berries, but should always make sure I combine them with yogurt, so the calcium negates the oxalate. I can continue to eat low-glycemic, but I have been advised to dial back the protein a bit and go for more complex carbs. Of course, since many carbs are high-glycemic AND high-FODMAP, I don't have a lot of choices. FYI -- I've been using buckwheat flour as a low-glycemic, gluten free choice. It goes without saying: buckwheat is high oxalate and probably contributed to my kidney stone problem! This is SO frustrating.
