Hermiones Mom's Journal, 01 June 2016

OK I'm just going to brag now: I am a really good cook now and I made the most delicious baked lake trout tonight -- not at all fancy: lemon juice, a little olive oil, and the usual seafood seasoning mix, baked 25 minutes at 375. Oh it was so good, and it drove the dogs insane. And I've started my program to try to re-introduce some of the FODMAP-banned fruits and vegetables and get a little creative about doing side dishes that are higher nutrition and lower carbs, fewer grains, etc. This week already, I've used peaches and nectarines in a smoothie, and I seem to be OK. Tonight I made a beautiful salad of green apple, fennel and walnuts -- the first apple I've eaten in almost 2 years. We'll see how it works out, because I'd love to be able to eat baked apple for dessert next fall. For my second side dish, I just had raw baby cut carrots, so no fuss or muss required, just put them on the plate. I was very happy with my dinner and quite full, and the total calorie count was quite reasonable. Now I cross my fingers and hope that apple will turn out to be OK. I've not had great luck with several of the other things I've tried again: broccoli, avocado, asparagus. I can eat a small amount of avocado and asparagus, but I have to have someone around to eat the leftovers, because I cant eat these things two days in a row. Eating a small portion of broccoli about killed me, but that was about 6 months ago, so I think I'm going to try again soon. We'll see.
