Finally perfected the turkey meatloaf recipe. It's taken a while but the one I made last night was really delicious. Very pleased.

Here's the meatloaf recipe: Turkey Meatloaf-Creole Style - Gluten Free Turkey meatloaf made with the Louisiana Trinity and creole spices -- and gluten free Ingredients 1 large egg 1/2 cup chopped red onions 1/2 cup chopped red sweet pepper 1/2 cup chopped celery 1 serving pomi chopped tomatoes 2 servings eas spice hunter cajun creole seasoning 1/4 tsp black pepper 3 servings trader joe's ground turkey breast 99% fat free 12 oz boneless roasted dark turkey meat 1 serving 365 organic original instant oatmeal 1 large egg white 5 servings lea & perrins the original worcestershire sauce 6 tbsps parmesan cheese (shredded) Directions 1.Preheat oven to 350. 2.Beat together egg and egg white til well combined. 3.Combine turkey, creole spice, pepper, and veggies. 4.Mix in egg and tomatoes and mix together well. Add oatmeal and blend in thoroughly to absorb all the moisture. 5.Turn mixture into 8 x 8 baking dish and smooth until evenly distributed. 6.Bake at 350 for 60 minutes or until meat thermometer registers done for "Poultry." If desired, halfway through baking, sprinkle the top with shredded parmesan cheese.

Thank you for this! I'm not a huge fan of Creole but I can see that this could easily be done with other flavors. The last time I did my meatloaf with just ground turkey it could have been used as a brick. NOT good. The add-ins of the tomato and dark turkey meat must be adding the moisture and fat that the turkey breast needs.

Vickie 5966 -- the moisture is really important with turkey. This came out really moist and delicious. You can substitute Italian seasoning for creole seasoning and it works just fine. Also -- use the meat thermometer so that you don't have any chance of overcooking it. Obviously, you don't want raw turkey, but overcooked ground turkey is yucky.

Hermoines Mom - thanks for the reminder about the thermometer. Your note about overcooked ground turkey made me think though - my meatloaf recipe is cooked in the crockpot. Normally I'd been mixing ground beef and ground turkey and it was very good. The total failure was when I used just ground turkey breast. I wonder if overcooking was part of the problem? Obviously the lack of fat/moisture were factors as well. When I try yours I'll definitely do it in the oven and not take chances.

Vickie 5966 -- you have hit the nail on the head: with very little fat and low moisture, turkey meatloaf can be a disaster. But when you add the tomatoes, extra egg white, and oatmeal to hold in the moisture, and you are careful not to overcook, this comes out moist and delicious.
