Ate much better today. I bought a Vitamix and absolutely love that thing. For breakfast I made a veggie/fruit drink (pinapple, wheatgrass, spinach, strawberries and blueberries). Tasted pretty good. Lunch I had Chicken breast stuffed w/ spinach and mozzarella cheese. The recipe had it made with feta cheese but could not find it last night so mozzarella was the alternative. It was pretty easy to make and tasted delicious.
