Made homemade sweet potato fries last night and DH loved them. I just peeled and cut up the sweet potatoes, shook them in melted coconut oil, sprinkled with sea salt and baked.

Now I have another healthy alternative to french fries that we can both enjoy, that is as long as I don't eat to many - LOL.

That sounds good, thanks for sharing. I have found one coconut oil that seems to work for me cooking. Might try that tonight if I remember, I have some nice sweet potatoes that I bought Sunday.

Our teenager despised sweet potatoes until I tried making them like baked french fries. (Now there's an oxymoron for you.) I use a spray oil on them and don't peel them, but they are marvelous.

Buffy, most of it doesn't like me, I keep trying different ones though and finally found one. The heavy fat feeling and taste of it makes me gag as does the coconut milk they sell to drink. The cans for cooking I have no issue, use them in soups and curries all the time. This one brand doesn't. Weird because I love coconut.

I did this not too long ago....they are addicting. Thank god French fries take a good amount of time to prepare and cook or else I would eat them all the time!!!! I actually cut my potatoes, soaked them, then boiled them slightly then they dry and I would toss them in a mixture of arrowroot flour, salt and pepper. After they are coated I would fry them in coconut oil. takes me all night to make them but the outcome is wonderful.

wholefood - I have to agree. Unfortunately, the ones that are the best health wise have an odd "fruity" scent. I like the more refined brands best. Still more healthy than canola oil.

BuffyBear - And I never thought about peeling them. I don't know if my family would have been patient enough to wait for peeled fries; they are usually a last minute idea my husband comes up with.

Oooooh, something else to think about. I looked up the carbs and think I have to wait until I have a day when I can splurge a bit. I love sweet potatoes (yams) with butter and cinnamon so I am sure I would really LOVE sweet potato fries. I also am finding that cooking with coconut oil works well at my house. Thanks for the idea!

Gwen - It was a splurge for me, but since I am trying to get DH to eat healthier, I couldn't very well cook them and not eat any. Next time I plan to just have a few.

Yum. Sweet potatoes turn out great cooked in the oven like that, I've found that if you let them sit a few minutes after coming out but not long enough to get cold, they crisp up some. Haven't tried it with coconut oil but I think that would be a good flavor combination, will have to try it.

Buffy, When I normally have fries I like mine greasy and salty that is why I don't eat them a lot.

Am home now, the one I like is surprisingly from Aldis Simply Nature Coconiut oil is unrefined, cold-pressed virgin oil. I love sweet potatoes baked with butter. what a yummy dessert or side. I usually save them for a dessert.
