Sounds good. Cauliflower rice - right? I made that for the first time last week and was pleasantly surprised at how good it was.  

Sorry to say, it isn't cauliflower rice; I've yet to make that, but after your comment, it's sure to be in my future, very soon.  

My daughter has really become taken with Frittata Friday. For the past two weeks, she has insisted on it. Who am I to argue?! :) I'm eager to hear how your Mexican combo works out. 

Think it will be Frittata Friday at my house....Bruce will be having Fettuccine Alfredo and I will be having eggs and whatever else I can find yummy to go into it. Have some fresh broccoli and cauliflower so I know they will make an appearance. May be a veggie frittata tonight....enjoy your weekend. We are working and mapping some pasture land to fly next week.  

Well, Izzypup68, my Mexican combo had to take a back seat to getting my dinner started, so I nuked the ingredients, except for the eggs, and had a quick lunch. My dinner will be a pot of pinto beans with ham hocks, and brown rice, on the side, along with some barbecued pig tails; which are in the oven as I'm typing this. I'll probably saute some green beans, to have as a vegetable to go with it. It's the kind of dinner that takes all day long to get done, and rarely get a chance to make due to a normally busy schedule. Maybe I'll make a frittata for lunch, tomorrow, after a morning activity at church. Have a great weekend ladies.
