Hi, everyone! Hope you are well. I bought coconut oil and put it in my coffee, but most days I forget to add it. I can remember years ago when US experts were telling us not to buy any processed food that contained coconut oil because they said it was unhealthy. Said not to eat any fats that were hard at room temperature or something like that. Why are we putting coconut oil in our coffee? I could google it, but if we discuss it here, it would help us all. Shrimp 'n Slaw Marinara
Entire recipe: 289 calories, 3g fat, 770mg sodium, 31g carbs, 14g fiber, 15g sugars, 36.5g protein -- PointsPlus® value 6*

Skip the pasta -- this saucy seafood dish will kick noodle cravings to the curb... for a fraction of the carbs and calories! Prep: 5 minutes Cook: 15 minutes. MAKES 1 SERVING

Ingredients:
One 12-oz. bag (4 cups) broccoli cole slaw
1/2 cup low-fat marinara sauce
4 oz. ready-to-eat shrimp
Seasonings: garlic powder, onion powder, red pepper flakes

Directions:
Bring a large skillet sprayed with nonstick spray to medium-high heat. Add broccoli slaw and 1/2 cup water.
Cover and cook until fully softened, about 10 minutes. Uncover and, if needed, cook and stir until water has evaporated, 2 - 3 minutes.

Add marinara sauce and shrimp. Cook and stir until hot and well mixed, about 2 minutes. Season to taste!

Alternative: Steam your slaw by microwaving it right in the bag, if the package says it can be done. Then transfer to a microwave-safe bowl. Stir in marinara sauce and shrimp. Microwave for 2 minutes, or until hot and well mixed. Season to taste!

Hmmm, I've never put coconut oil in my coffee because even after roasting, the coffee beans retain oil. I'd like to know more about coconut oil in coffee.

Hey Deb,good question & an even better answer! But as for me? I neither drink coffee or use coconut oil. Why? I simply dont like the taste of either of them.Someone suggested that perhaps if I doctored it up I would like it. My response was: why would I *want* to drink something that I didnt like *unless* I "doctored" it up? :)

LOL - look at BulletProof coffee - that tells you how the coconut oil helps with brain function and gives immediate energy, The key is to blend the coconut oil and grassed butter into the hot coffee with blender so it mixes well and ends up frothy.

OMGosh!!!! LOL LOL LOL--I have to post this. I tried to drink Coconut water with pineapple today. I wanted to try something that was supposed to be healthy. I tried it years ago (plain coconut water) and didn't like it. I thought, hmmmm...maybe this is better, I'll try it. My co-worker wanted to try it to. We heard it's good for you. I poured it into two cups, we both took a sip and threw the full cups away. LOL. I really tried, but can't get it down. Is it good in coffee? How much do you put in? Does it have the same effect in hot coffee? Sorry if I sound dumb, but I am when it comes to this!

the texture and fatty taste of coconut oil honestly make me sick to my stomach, tried, cannot do it. I love coconut milk and cream and coconut meat. The oil, no. I use it as a moisturizer and make salt scrubs with it and use it to tame my hair. Not to eat. Cannot even think about putting it in my coffee.

How is coconut sugar? I gave up refined sugar for turbinado, but would like to try coconut.

Coconut sugar tastes good. Not sure if it's better for you. Maybe someone has some input. It does not melt well in hot tea, at least not the brand I tried.

Crazy for coconuts. lol I forgot about coconut oil being for brain function and energy. I should use it every day because my brain forgets things. lol

Will have to try that coconut water. I have never bought coconut sugar. You all are making me think about Mounds and Almond Joy candy bars. uh oh, NO NO NO

Why coconut oil in coffee? I started doing it as part of 16:8 intermittent fasting. It gives a boost of energy and fuel without breaking the fast and is said to actually increase your fat burn. Since then I've learned of more benefits. It increases HDL cholesterol, is a natural antibiotic, and the ketones help with brain function and even treating and possibly preventing or delaying onset of Alzheimer's disease. And more benefits I can't remember. The virgin unrefined oil has a coconut taste/smell and also tastes kind of buttery. Refined oil has no taste, has the ketone benefits but not the others as the refining process removes stuff.

You guys don't shoot me, but I did try spreading a teaspoon of coconut oil on my Delightful wheat bread. I'm not doing low carb, just moderate carbs. :)

HUMM? I wonder if The"Researchers" will change their minds again, and tell us that- "Oh by the way..., new studies, have shown that Coconut oil clogs our arteries at an alarming rate!" LOL :) New studies, are always telling us, that the old studies were wrong:)~Ann

So true, Ann. Last autumn salt became controversial. Researchers said if potato chips have less salt, people will eat more chips and consume more carbs and fat which is bad for them. So they are saying keep the chips salty. Don't know who to believe anymore.

LOL Coffee studies! Have yet to give up my coffee, have a big mug at the moment.. RE: salt you do need some. I cut mine back too far, my doc told me I need to eat more salt as my sodium levels were too low on my last blood test.

Alert, Alert, there's a new study that says don't drink water. Just sit in a bathtub for 30 minutes so you won't gain water weight. Lol, I know right. These studies are getting crazy. I've tried coconut water at Whole Foods as a sample and was so excited until I took a sip. I had to throw it away. I think I sadly remembered seeing other cups just put on the shelves by others. I have Pure Natural Sri Lankan coconut oil and it doesn't really have a taste. But, I'm pretty sure if it was in water it would taste worst. I can't imagine drinking plain buttery water and expecting it to taste good. I've heard Dr. Oz talking about the BulletProof coffee. Just yesterday, he was talking about how he was on the hype with agave nectar as a substitute sweetener. But, now studies show it's not as good because it's half glucose and half fructose. Therefore, it's definitely not such a good choice for those suffering with diabetes.

The only way to drink or eat coconut is fresh. I had it when I was in Thailand and it is heavenly dilicious. What we get in the UK is either crap, old or over processed.
