Finally got around to making the oatmeal/cottage cheese pancakes yesterday that I'd seen recipes for. I was a little wary - that doesn't seem like a very pancake-y combination. Turned out to be one of the best pancakes I'd ever had (I had to make two - my 3 year old son took a bite of mine after it was done, then decided he was going to eat all of it for himself).

Anyway, protein-packed, tasty pancakes that simply do not taste like a mix of oatmeal and cottage cheese:

1/2 cup rolled oats
1/2 cup cottage cheese
1 egg
1/8 cup milk
1/2 to 1 tsp vanilla
1/8 tsp baking powder
cinnamon

Optional:
Extra protein powder (I used about 15g casein and 15g whey, both vanilla)
A little sweetener - stevia, honey, agave, whatever
mixed-in fruit. I used frozen blueberries

Mix all the ingredients except the blueberries in a blender. Grind it up into a batter, then stir in the blueberries.
Then cook it up. Couldn't be easier.
