I am so nutz lol. I bought this hideous soy cheese and it was quite expensive. I put it on the eggs this morning while telling my son how horrible it was. He asked me why the heck am I eating it then. I, of course, said " becuse it cost too much to waste!"
When did I turn into Da?

Me too. I bought the Daiya brand cheese. It was only good because it actually melted. Acquired taste, I guess.

I think that mirrors the "clean your plate" mantra from my childhood. You can't feel bad about throwing something out you don't want. I just threw out an Almond Cheese that the Whole Foods guys said was "amazing" and it was not. No regrets!

Been there as well, on several different kinds of foods. I also hate to waste food. I have yet to have any of the vegan cheese that I liked. One reason I won't go vegan. I love some good cheese now and then.

Well said Glen and exactly what I was thinking. Lol I can't help but think if Da were still here he'd say "throw it the heck away then!" HE certainly never ate anything that tasted like poop. It's funny how we pass down these notions that in all actuality we don't even follow ourselves. I will be paying more attention to what I say to the rugrats today!

If anyone here makes cheese....how do you figure the carb count? I make it with goats milk and Greek yogurt as the starter. Would it be similiar to cream cheese? Anyone know any non dairy cheese that isn't gawdawful?

If you're still looking for a replacement cheesey substance, try nutritional yeast. name sounds gross but it's HEAVY in nutrience, and tastes amazing. It's a powder, so I use it as a 'Parmesan replacement' or in wet things to make them 'cheesier,' (think casseroles, I put it in my pesto, sprinkled over roasted tomatoes, stuff like that). You can buy it in the bulk section at whole foods so you can buy .50 cents worth to try, and not feel like you wasted a lot of food or money if you don't like it.

And Soy products are not that good for you health. “Soy products are very high in phytic acid, which can interfere with mineral absorption,”. “So, despite claims that soy helps prevent osteoporosis, foods that contain phytic acid can actually interfere with the absorption of minerals, possibly leading to mineral deficiencies. Whereas soaking and sprouting other grains and legumes can remove the phytic acid, that does not work with soy, and the only way to neutralize the phytic acid in soy is to ferment it. The only form of soy that is recommends is organic fermented soy (such as miso and tempeh). Fermented foods are beneficial to our digestion, and are helpful for boosting the healthy bacteria in our guts. Soy is one of the most genetically modified foods (along with corn). Unless it says non-GMO, or organic, it is safe to assume it is probably GMO soy. And when it comes to soy milk, make sure it’s unsweetened. Only when it’s unsweetened are there less calories than regular milk, or skim. When you add in all that sugar, it’s a whole new ball game nutritionally and not beneficial from a health or diet perspective. WOW! Great info, Vegan! So glad you posted that about soy! Nicholaix I bought the same cheese and wound up giving it to my dogs. They liked it.

Hey Linda, that's how you make any cheese. It's really easy. I actually use my crockpot. You make a yogurt first by heating and cooling your base milk, adding a culture(yogurt, etc.) Let it thicken at warm temp(not COOK!)then strain it with cheesecloth to get out the whey. Let it ripen for awhile and voila! cheese! For my kids I just use a gallon of milk from the store and my yogurt as a starter for their yogurt. Much cheaper and no sugar added. Making Mozzarella cheese is crazy easy too. I was taught to make most everything we use so I am full of useless recipes and patterns that noone has time for anymore lol.

That's too funny. I use free weights in my basement gym. My wife bought a weider weight machine 6 years ago. We have it for exactly the same reason. I think it's left an after taste in her mouth too. She uses it to air dry clothes. :(

Almond milk no, and you need live cultures for it to set right. I am allergic to dairy but I can tolerate goat's milk so I make mine with that so I have yogurt and soft fresh cheese(like farmers cheese).

Sauerkraut has lots of good live cultures so much more effective than a probiotic capsule.

the original Almond chedder style cheese made by Lisanatti is pretty good. It has 1g fat,3g carbs and 7 grams protein. Got it from Woodmans.
