So, I need your help. My husband really wants to get in better shape. Here's the rub: he is the pickiest eater I have ever met. He doesn't like vegetables and most fruits. Like none, other than the small side salad he has before every dinner....and it's hard to get him to try even things like quinoa or any type of beans or yogurt. He's like a meat and cheese and potatoes kind of guy. I do most of the cooking and since he doesn't eat them, I tend to make the veggies on the side or make a vegetarian version of whatever I'm making for him for myself. I need some recipes! I do have that cookbook where you hide vegetables in things but he said he can taste it. Ugh!! Any ideas, kiddos?

My son is like that... I guess just simply make his meals a bit smaller at first and ask him like you ask a child just try one if you don't care for it spit it out. Try a no salt seasoning I made hamburgers and pureed some veggies in it. I ate it he didn't I wasn't counting on that to start with but everyone else enjoyed them. He's an adult and just like a horse you can lead him but not make him drink.

That is fine just start making his portions of meat and potatoes smaller say the size of your fist and only make enough for one serving for each of you. I know it is hard cooking for two. Or tell him have an open mind he might actually try something he likes.

So true, I just wish I could help...it's tough having so much knowledge on what you SHOULD eat and knowing it won't help him....picky picky!

Yeah portion control is #1 for sure, I don't over-eat but he definitely does....

if he does any kind of snacking between meals, then he can cut that out. Eliminate any sugary treats that he may eat and find low calorie alternatives to his current sauces and dressings that he uses. You can totally lose weight eating meat, potatoes and bread. you'd be surprised how many "spare calories" he's probably taking in.

Sounds like a low carb diet might work for him, would limit stuff like potatoes though. How about maybe disguising some veggies - for example Classic Rocker posted a buffalo cauliflower recipe that you bake, if you coat it with panko crumbs it has a nice browned crispy crust that's not fried or loaded with oils. Could do the same with green beans, maybe squash or eggplant too?

I think if he has no idea what is in it, that's my best route lol...trickey!! yes! @Chad, he really isn't a "snacker", pretty much just chips and salsa or pretzels if anything (he's lucky if he has time to eat 2 meals, which is also a problem)...we could lighten up some of the sauces he likes though, good idea ;)

jmb, I agree with you 100% that low carb would probably work...however, with some people who are as picky as this man sounds, trying to push low carb on him may set him up for failure. I lose weight just fine eating 30-40% carbs daily. Of course, I do exercise a lot more than the average bear...or lion.....

You know what, he's an adult. Cookinglight.com and their magazine offer lot's of recipes for meats (and other foods). Slap a potato in the micro and let him have his side salad. Plan out nice meals for you that you will enjoy. Encourage him to give it a try, but if he doesn't like what you are making, he can make something himself. He has to control what goes in his mouth. You control what you eat. He has to make up his own mind to eat healthy and get fit. Have him look up recipes that he would enjoy. He needs to take control of his weight loss.

True Suzi, that's kinda what we do now...I just wish I could MAKE him, makes me sad that he's so upset about it...but you're right I CAN'T MAKE him so I can guide and he can join me if he likes...

Even cutting out chips, salsa, and pretzels from his diet could easily cut out 500-800 calories per week out of his diet, they add up quick. Soda? Juice? that's well over 1000 cals per week.

Yeah true...he's strictly a water and protein shake guy so that's good :)

Sorry to be blunt, but he is a grown man. He knows what is good for him and what is not. He is using his "pickyness" as a crutch. If he was serious about a lifestyle change, he would look at foods that were beneficial. Cook for you, if he doesn't like what you cook, he can either cook something else or go grab a burger.

I am a very picky eater as well. The thing that helped me lose weight is counting calories. I tried eating a lot of fruits and vegetables but it is just not for me. I can still eat some of the things I love but just not so much. Like some of the others have said, portion control. It may not work for everyone, but it has been the only way I have been able to lose weight. I hope this helps and good luck.

You know, if the only advice you have is to "hang him out to dry",I would prefer you just NOT commenting....I actually want helpful advice not just someone's rude opinion...
