Grazin' with friends did me in. ARGH.

Last Day of Week 1 challenge - Do Hash Browns count as a vegetable?

Potatoes *are* a vegetable, 'tis true. But for our purposes, hashbrowns are a no-no starch. :) You're doing well, despite the "grazing". Hang in there!

I count them as a vegetable. But when you fry potatoes you have to count the oil too. I don't fry much but when I do I use olive oil. At least it's healthier than the alternatives. You have to decide if potatoes are a starch YOU can live with. Personally, I eat them most days and look at my weight chart. Pick your battles. Mine are rice, bread and pasta.

Thanks WilliamWilkins and Msbuggirl. I was being facieses about the Hash Browns. While I know potatoes are a vegetable, I normally don't eat fries, & only rarely hash browns. My boss thought she was doing me a favor for breakfast, since I told her I was on a challenge to eat vegetables with every meal. Plus Chick-fil-a has sugar already in their "plain" coffee. WHAT? I don't like sugar added to my coffee. So Monday weigh in was up 2 lbs, and breakfast from Chick-fil-a. As I said before "ARGH"!

The best hash browns are the cauliflower hash browns, made from cauliflower, you can find the recipe on You Tube, I love them they taste as good as potato hash browns or better to me.
