I had a heck of a year so far.
Three colonoscopies, removal of plenty of polyps. A plantar fasciitis that kept me from moving most of the time. Besides that, a lot of emotional stress, relationship fell apart, stress at work, one of my bosses passed away, the other one I can't stand...gained weight to an all time high; life is not so good right now. But I am looking forward.
I need to make a few changes, someone said one at a time but I think one is not working without the other.
So, how to change my diet. I don't trust science too much. There are so many contrary opinions out there. I am a beef lover, can't think of any other meat so tasteful. Don't like the smell of pork, chicken, well, sometimes... turkey, only for Thanksgiving... what else is there... lamb, no, can't eat it. That;s another story I might tell one day.
Well, looks like I have to become a vegetarian that also eats fish and shellfish. Tough choice! Oh, I like fish but the way the market looks it can become quite boring. Wild caught, what can we find? Some salmon, some haddock... that's about it - and expensive.
I have to live low carb, that is for sure. I had some weird lab results lately. Despite not watching my diet my Cholesterol, HDL, LDL, Tryglicerides are good. What made me think was glucose. I had a fasting test and it was up to 100, too much. A few weeks ago I had the glucose checked non fasting and it was at 85. That was a surprise. I guess it is kind of not in balance at all.
Next to that I feel like I have a gluten intolerance. If I eat sweets, it does not bother me, so it is not the carb but let me have a slice of bread or something else with gluten in it. I just feel miserable. My legs are like they want to burst open, my stomach gets upset, feels like the food just keeps on sitting there and I get tired. So, away with gluten I do.. well. not liked in Atkins at all if I am not mistaken.
By now I would love to eat some grains but I am quite hesitant. I have not eaten millet for so long and I love it. Prepared like a risotto, well kind of. And there are other grains... Well, I don't really know which way to turn.
I guess I start of by preparing my normal breakfast, eggs, cheese, and veggies. then I need to make a plan. Maybe someone here can help me with it.

Gluten free.....what about rye like in Wasa bread or Vollkorn rye? Just on occasion?

Gigi, I know it will get better, I am here, back ... one step into the right direction. The rest will fall into place. As for gluten free, those Vollkorn breads don't work. It is kind of amazing that they have gluten free marked oat meal on the market. Grains with Gluten Barley (malt, malt flavoring and malt vinegar are usually made from barley) Rye Triticale (a cross between wheat and rye) Wheat, including varieties like spelt, kamut, farro and durum; and products like bulgur, semolina Oats** see below **Oats are inherently gluten-free, but are frequently contaminated with wheat during growing or processing. Several companies (Bob's Red Mill, Cream Hill Estates, GF Harvest (formerly Gluten Free Oats), and Avena Foods are currently among those that offer pure, uncontaminated oats. Ask your physician if these oats are acceptable for you. Gluten free: Amaranth,Arrowroot, Buckwheat,Corn and cornmeal,Flax,Gluten-free flours, (rice, soy, corn, potato, bean),Hominy (corn),Millet,Quinoa,Rice,Sorghum,Soy,Tapioca,Teff (no clue what that is) It is not that it makes me really sick but I feel very uncomfortable when I have eaten it. And I don't feel that way when I have carbs from sugar or so. Since I want to stay close to Atkins (still have some sugar crashes) so I try to avoid all the grains. What is way more difficult for me is beef. but I did kind of well this week, cutting back on meat a lot. Just keep on going :-)

I thought for a long time that I had a gluten intolerance. Nope. It was actually the yeast that was affecting my digestive system. I have switched to bread that is made with sour dough. Really tasty. The other thing that upsets my tummy with really bad bloating is dairy. As long as I avoid it I am good. Good luck with finding your path :)

Thanks Schmetterling... I am on my way :-))) I am not sure if it is gluten but since I don't intend to eat any grains soon it should not be a problem. I only observed on how I felt when I ate bread or cake or so and that the reaction did no occur when I had, let's say chocolate. Could be something else too. As for sourdough, wheat does not rise with it, it needs yeast. Rye does but pure rye bread... tough. I made it once a long time ago, that is not easy to eat *lol*. As of now I try not to worry about it, it is off limits (unless I cheat as I did yesterday).
