Well.......it's official, I'm obsessed. With pico de gallo...I had some last week and I've been craving it every day since. I was going to make some last night but ran out of time....bound and determined to make it tonight...a big ole batch! And maybe mix it with some mashed avocado and shredded chicken or black beans. **drooling** I'm also making veggie sushi, well trying to, tonight so I have some to snack on throughout the week. Yet another thing I crave and haven't had in almost A YEAR!!! Hubby doesn't like sushi or hibachi all that much but I have decided that it is OK to make myself food and make him something else. Or give him chicken wings...that's all he needs, chicken wings and hot sauce...poof done! He's a grown up, he knows how to feed himself!

In other news, coworker...still an idiot.

*le sigh* Oh, how I miss things like pico de gallo. Kicking the nightshades (tomatoes, peppers, potatoes, and eggplants) was probably the hardest to accept that I couldn't/shouldn't eat them anymore. Wheat? No problem. GMO's? Who needs 'em! But delicious vine-ripened tomatoes and spicy peppers? Those were so hard to give up. Oh well. C'est la vie. Be sure to have some extra pico for me, twinnie!!

Yep, I'm with him: chicken wings and a cold beer! Of course a little pico de gallo ain't bad either, but you can keep the lettuce, I'll just dip my tortilla chips in it.

I love it, I got spoiled when my sister, was visiting me, she made that every day , plus, fresh lemon ,lime, orange, juice , for me. The fruit came from our neighbors trees, she made it sugar free, with stevia.

I love it when my wife makes a big bowl of homemade salsa...at least 4 jalapenos, 1 habanero for that extra kick, and lots of vitamins from the tomatoes, cilantro, onion....damn, I want some chips and salsa now! Although, I would never turn down hot wings and a cold beer!

It's an inherited food sensitivity I have. My mom has it too. Nightshades contain various compounds which some people can not metabolize and end up toxic to the body, linked a cascade of medical problems like IBS, Fibromyalgia, Crohn's, to behavioral problems and learning disabilities. My nightshade sensitivity caused horrible migraines, insomnia, excruciating arthritis and redness, swelling, itching and burning in my hands and feet and a bunch of digestive problems too icky to mention here. It's a lot more prevalent than most people know. I had it for 38 years and had no idea until my mom told me she was diagnosed with it after her stroke 2 years ago. It's quite common in some parts of Europe, with it affecting upwards of 12% of the population there, (particularly the U.K., where I was born), where those cultures spent thousands of years without any nightshades and they were considered quite poisonous in some British medical texts dating back as recently as the year 1800. Only in the last 500 years or so has Britain been eating them, and since food sensitivity symptoms can build very gradually, most people have no idea they have it and it gets blamed on something else. Three weeks after I gave up nightshades, my life completely changed and that was over a year ago. I had to learn what to cook without nightshades, because I ADORED spicy foods and marinara sauce. Foodsmatter dot com has a good website with lots of info about it on their allergy/intolerance page. Chances are, you know someone who has it and they have no idea!

It's kind of like salsa, but chunkier and less liquid....you just chop up roma tomatoes, onion, cilantro, jalapeno...add some lime juice, salt, pinch of sugar to taste...super yummy!

We eat ALOT of pico too......it goes with almost everything and soooooo yummy!!

and it's SOOOO easy to make....seriously, I had some odds n ends the other day...mashed up some avocado, added some shredded chicken and black olives, a little pico and poof loaded nachos! yummmmmmm!
