I'm beginning to love Thursdays! I've just recently changed to a part time work schedule, where Thursday is the first day of my 5 day weekend. Does that count as a weekend? It feels like I spend Thursday catching up on chores, Friday preparing for the weekend activity with my husband, then Monday cleaning up from the real weekend. Tuesday and Wednesday are just hectic with work/children/dinner, etc... I don't think that I did well on my diet yesterday. I tracked every bite, but I just feel uncertain that I've selected the right way to track things. Like the Tom Yum Soup - it was greasy and had vegetables and chicken in it. I'm not sure that traditional Tom Yum is made that way. Then for dinner I baked a whole chicken (removed most of the skin first), onion, and carrots in a crock pot. I refrigerated the broth last night and found that it had little to no fat separated, but did I track the chicken breast correctly? IDK. Today I will choose foods that track easier so I can feel better about being 100% on track. Knowing that I'm following my calorie limits helps me stay strong with my resolve. I don't want to cheat. I don't want to stop eating healthy. I don't want to fall back to the bad habits I know now as normal.

Other than that, I'm excited to be canning 40 lbs of peaches tomorrow! Yum!
