Made my husband a potato salad this morning and while I was chopping I made a whole bunch of munchies for myself - slices of hard boiled eggs, cucumbers, radishes, etc., not to mention a batch of MIM and homemade salad dressing. And the good thing about this is I shouldn't have to cook again for 3 days.
