Made my husband a potato salad this morning and while I was chopping I made a whole bunch of munchies for myself - slices of hard boiled eggs, cucumbers, radishes, etc., not to mention a batch of MIM and homemade salad dressing. And the good thing about this is I shouldn't have to cook again for 3 days.

Hey Buffy I like the idea of not cooking for three days too, so have got an oxtail casserole on the go- usually oxtail casserole for two days and vegetable soup by day three when all the meat has been eaten!
