It's pretty funny. I was going to say that I'm not really doing Atkins (I can't get myself under control). I am trying to; cut back on carbs, not drink any sodas, stay away from caffeine. Then I look at my food choices for today and I have to laugh (not in a good way). We eat way too much fast food. That's almost always on the menu for lunch. I'm going to have to work harder at fixing lunch. It's really hard because I've got fibromyalgia Chronic Fatigue Syndrome, and am Bi-Polar. Cooking just isn't easy. I guess I'm going to have to make extra on days I'm doing good so I'll have back-ups when the days aren't so good. Now I've got to get brave and write down my measurements and try to get the exercise tape off of the T.V. stand and into the player! :)

We made freeze n bake meals. You can buy foil pans off amazon or from dollar tree for 30-50¢ each for one dish meals or meals where you only have to add veggies. Things like lasagna, steamed rice, wet burritos, shepherds pie, casserol, roasts etc.. and use gallon baggies for 1-2 person pizzas. Make up several of one food at a time (we make 6-9 normally) then freeze them. They work just like the store bought versions but you get to choose what you put in them and they are soooo much cheaper. We make 6-9 of one meal a week and then have that to choose from on nights and lunches we don't want to really. By doing this we also make sure nothing we are allergic to (corn for me and wheat for my oldest son) is in the meals. I have posted a basic walk along with a few we've made on my family blog if I didn't make sense I can message you the links (FS won't allow links in replies. I promise no spam, just a family blog- mostly pictures, medical and kid related updates for our far away family and friends). It's really easy to do and you can wait for a day you feel good to do it (that's why I started it was because of my husband working so much and my health issues, so we've been using them less as I've felt better- but still try to keep some on hand for when we are busy or illness strikes).
