My mother-in-law visited us yesterday for a late Christmas celebration and made Spanish rice and Hawaiian spare ribs. Definitely not Atkins friendly but she hasn't made the ribs since before I was married! So I indulged.
The up side here is that I discovered her Puerto Rican cuisine cook book while she was here. There are a lot of amazing recipes in it, like a broccoli and avacado salad or the brain patties (ok, I'll probably skip this one!) Needless to say, I have a new source of low-carb recipes to try while exploring my wife's heritage.

When I lived in Italy we would eat fried calves brain. Sliced thin and breaded it's actually quite good and mineral-rich. It is hard to go wrong with anything deep-fried and battered, though. LOL.

Haha, I remember my favorite Mexican restaurant used to have a whole section dedicated to brain food... literally. I never knew anyone that was brave enough to try it. Hey amryk, what do vegetarian zombies eat? ...GRRAAAIINNSS... (I know, it's corny... look another pun!)

My husband's Hispanic culture tends to get in the way of healthy eating! I understand what you mean... I try to get my mother in law to say home and we can visit. I arrive on a full stomach!!
