Diet has been all over the place... total lack of consistency. Workouts have been sporadic at best. Drink too much alcohol. Starting to day strict adherence to the low carb diet. Gym two days, trail hike on the third day. Finally no more booze until my goals are reached.

Good job on deciding to give up the alcohol. I don't eat the same number of calories or carbs each day, because every day is a different situation. Variety may help you lose weight better because your body won't get used to the same things which can cause a plateau. I work out as much as I can, but sometimes I go a week without it if I can't find the motivation. I do wish I would work out more consistently and I think it's great when people do. Just don't be too hard on yourself.
