CollyMP's Journal, 21 July 2013

Feeling very tired today! LOL! Weight was up a bit this morning but I ate some salty french fries on the way home from some friends fairly late last night(I was hungry, wanted to eat at home, but husband HAD to stop right then, his blood sugar was plummeting). Then took my meds really late. Then stuffed my face full of food at home, the stuff I'd wanted to eat in any case, when I got home, too.

Meh-some days are better'n others. Still no wheat consumed, so I count that as a win!

Found an ENTIRELY gluten free restaurant/bakery here in town, I may have to check it out.

I'm hoping the constantly tired feeling will eventually depart. Possibly I just need to eat more carbs of a different type. It's a definite learning curve, but I am eating much more whole stuff, real food, and a lot less processed stuff. It's definitely more trouble, more prep work, but it's do-able, and my intestinal workings are much happier. So there's that!

Congrads on sticking to it! The elimination diet is MUCH harder than just eliminating gluten, good choice:-) Glad your tummy is less upset. Are your symptoms going away? I started to buy some gluten free stuff, but a LOT of it has too much crap in it, sweeteners I don't want. SO, you can have oatmeal for breakfast (responding to your last post) and get some brown rice it's gluten free. You can have oatmeal with chia seed, yummmmmm. Sometimes I wonder, when I cut out wheat, I cut out sooo many other things that are so processed, then I wonder, what is really causing my problem, haha, and I test my system all the time. Well, I am going to follow you this week with no gluten:-) I think I am on day 3, I don't keep it in the house, so unless I go buy crap like cake, I am good to go. Keep up the good work! Im really curious if losing weight will be easier, some say it is when gluten free.

It may be easier, we shall see! LOL! I'm not a big sweet eater so the whole cake/cookie thing isn't so much of a problem. The savory craving IS-I found some nut-thin crackers which make a nice substitute for regular crackers (they taste like smokehouse almonds). So half a dozen of those really calms my "bread tooth". they've got some junk in them, but if I don't have SOMETHING I'm going to blow it. I need to find a way to make some Greek yogurt and seasonings for a dip for raw veggies, and pick up some more hummus. GAWD I love that stuff. Maybe I should buy it at Sam's...

watch out for that hummus, it is calorie DENSE, very easy to eat way too much without measuring it!!! But sooo good, just depends on what diet you are on/so to speak. ... hmmm, savory?? Like what? I am thinking..think think.. wheat isn't savory LOL. Do you mean chips or pretzels or smooth creamy dip?? hmmmm I would think it would be ez to make something savory... I am so confused:-)

well no, wheat isn't but bread generally is-if it's made with yeast it's fermented slightly during the rising process, and using other grains with it adds some bitterness, and you also always use salt to retard the rise from the yeast just a bit. You want it to start rising but then slow down. Also, there's almost always some white flour in most breads, even ones with whole grain, whole grain by itself can't get the lift that a blend can, and white flour is definitely not sweet like wheat is. The breads I make that the fam likes the most are oatmeal, cheddar, rye, and Italian with herbs and parmesan/mozzarella. Oh, and pita. Some are made with olive oil, again, smells sweet, but isn't really. Yes, it would be easy to go overboard on hummus I think, but I really don't eat anything else calorie dense unless we have coffee ice cream! LOL! I'm eating and eating and eating the raw veggies and the fruit and I'm not gettin' anywhere.
