starting to feel a little better - even with all the stress at work this week - I feel like I handled it. Today is spike day and I have to tell you that I feel guilty eating junk so I am trying to spike with healthy options in mine - I just made my son and I Paleo mug cakes - 2 1/2 minutes in the microwave and it's done!!! And although higher in carbs - it is still pretty good - banana, almond butter, egg, cocoa, a bit of agave and a tablespoon of chocolate chips delicious! Even the little guy loves it! I also have some paleo banana bread in the oven for dinner tonight! Feel great about my first week :) here is to week 2!

That does sound good. I wish I could eat eggs. I tried making eggless brownies once and the results were pretty sad.

I would miss eggs - I have a lot of food allergies so I understand what it is like :( What about egg alternatives like the flax eggs? http://www.food.com/recipe/fla... I have some vegan friend and this is what they use. Worth a try?
