Sandy701's Journal, 04 April 2013

An unexpected surprise in that the rain let up and this morning was warmer and drier, so the dogs and I got our walk in. Actually, there's still a bit of rain in the forecast for this afternoon, but because I already walked.....I don't care!!!

Today, I'm getting in some quarterly deep cleaning of the master bedroom, getting everything off the bed and put through the laundry, and resetting the large rugs that always seem to work their way into the corners of the room, sliding up the floor moldings.

In the meantime, while waiting on the laundry, I did a bit more research on the best way to prepare Boston butt roasts. We tried our first one a few months ago in the slow cooker and it turned out pretty well. But THIS time, when the store put them on sale for a fantastic $.69/pound, it only applied to the larger roasts. So, I've got a 10-pound roast (!!!) that won't fit in the slow cooker and will need to be done in the oven. Recipes indicate this thing could take 15-20 hours to cook - Yikes! I can't marinate it and get it cooked before my haircut appointment tomorrow, so I guess I'll marinate it tomorrow morning and then begin the cooking process tomorrow night, after I'm back home. I'll plan this out better the next time...live and learn.

I'm close to recording a pound drop in weight....so close.....so close in that I'm actually thinking about the NEXT pound and how maybe, just maybe, THAT one is getting close too. Got to keep myself motivated and focused on exactly what I'm working on.

BuffyBear's recommendation on a new salad dressing was right on the money! I picked it up yesterday and didn't wait to try it. Because it's a bit thinner than my usual dressing, I even measured out the stated 2 tablespoon serving just to see if that's been what I've been putting on my salads. Probably not, as it turns out. But with this new dressing, I can use a bit more and still come in under what my old dressing gave me in carbs and calories. BTW....my salads at night are pretty big.....probably should measure out those greens in ounces to see how that comes out too, although any kind of green "salad" can't really get me into trouble.

The reason your rain let up is that you sent it all here! I'll be watching for your next weigh in to see how quickly that pound melts.

Sandy, glad the rain let up and you were able to get a walk in! I need to see what kind of salad dressing you are talking about. I just use vinegar and oil or homemade buttermilk ranch. It gets boring. I also eat a large salad at night....I love it! Great job on that pound!

Hi there, how ya doing? That pork butt sounds enormous. Could you not cut it into smaller pieces and do them in the crock pot? Hope it turned out fabulous. How is the new doggie baby working out? Sounds like you are doing well with both dogs now.
