Theory on weight gain: too much fiber over the last few weeks? Drop back to approximately 30 grams a day
116.5 lb Lost so far: 3.5 lb.    Still to go: 4.5 lb.    Diet followed 100%.

Fiber doesn't make you gain weight. If you have been eating a huge amount of fiber that makes your caloric intake go up a lot, then maybe. But otherwise, it's most likely water weight from too much sodium, muscles retaining water from working out, hormones, stress, lack of sleep, etc. Fiber actually promotes fat loss and keeps your constitution regular.
