Experimental Medifast Recipe: Chili Cheese Bites

Result: Needs work but has potential. I'll include the change I think it needs in the recipe below.

Recipe:

1 pkg Medifast Chili
1/4 cup egg beaters
1/4 tsp baking powder
1/4 tsp chili powder
1/8 tsp cumin
1/8 tsp sea salt
1 oz shredded mozzarella

Optional: 1 TBSP salsa for dipping

Heat oven 400 degrees. Mix first 6 ingredients thoroughly in a small bowl cover with plastic wrap and refrigerate for 30 mins to 1 hour. Spoon mixture into a mini muffin tin lightly sprayed with Pam spray. Sprinkle with mozzarella. Bake for 7 mins or until puffy and cheese starts to brown. Yield 9 - 1 serving. *** This also accounts for 29% of your daily lean portion and 1 condiment if you use the salsa. ***

I just made this up based on another recipe I saw. I didn't let the chili soak for 30 mins to an hour so my beans were kinda crunchy, but the overall flavor was pretty good. I look forward to making a sweet version of this using one of the shake mixes, but I'll try that another day. :)
