ctlss's Journal, 01 March 2013


Well, I got the house cleaned up today. I have been seriously slacking while I've been feeling punk, and it needed it terribly. The animal fur tumbleweeds have been eradicated, the muddy paw prints scrubbed up, and we are ready for them to mess things up again. Dan did the sheets today, so tonight it's clean sheet night...I love Fridays. :)

Tomorrow I am attending a women's conference with Baby Sis, and my SIL. It is called Worth Redeeming and is a Christian retreat for women. It should be interesting. They are serving breakfast and baby is taking low carb items for us, so it's all good. Coffee, egg bake, and fellowship.

I take the last of my antibiotics tomorrow...I am hoping that I continue to get better. At least I had the energy to clean today, and that's a marked improvement over where I have been the last couple of weeks.

We still are having a hard time getting out of our driveway, it is an icy mess, and every night we get more snow...only an inch or so, but during the day it melts a bit, gets slushy, and then refreezes over night. Makes for some very slippery roads.

Last night we made "Meatza" again, but used a round pizza pan this time instead and it turned out awesome. Every time we make it, it gets better! Here is a pic of last night's masterpiece...actually I did pics of each step:

We have also discovered a new squash called Chayote. It is very good raw (very crisp and clean tasting, kind of like a cucmber) and when cubed and added to soups and stews it takes on the flavor of the food it is cooked with and has a consistency similar to a potato. Really very good. We had some clam chowder in the freezer and Dan has thawed and reheated it. He took a Chayote squash, cooked it in the microwave until it was al dente, and is adding it to the chowder while it is reheating. Should be good.

We went to mom's on Wednesday, although we like to never got out of the driveway. Our niece, Erica, was there and joined us in our Rummy game, which we didn't have time to finish it. We traded evenings with middle sis, so won't be going back until Monday, and we will finish it then. We had a good time. My other niece and her fiance stopped by for a few minutes as well.

I hope that cold of yours is finally gone. Remember don't go crazy the moment you feel a bit better, get lots of rest. I so know what you mean about those fur tumbleweeds and the spring shed is starting. I'll have to look for that Chayote sounds interesting. I use japaneese Diakon radish the same way.

Steph..I hope that cold leaves you soon..DH is sick again with one..I hate it for him..Will have to try out that Chayote...sounds delish and may not hurt me..will give it a try any way...Love and Hugs...:O)

Hi Stef, Friday was my cleaning day too though I only got the bedroom and bathroom done. Hadn't been done in a while so needed a good doing over, I was exhausted when it was done. I was hoping someone else would run the vacuum over the main floor hall, livingroom and kitchen when I was at my sister's yesterday but I think I gotta ask for help because it didn't get done and I am bound and determined that I am not going to do it all myself anymore. Right? Glad you got to your mum's and had a good time. Your life and my life are quite parallel in a lot of ways. Hope you get to church today becuase I know you really enjoy that too.

Looks delish! I'm curious about the "crust" too. I just made the Cauliflower crust about a week ago. It was pretty good.

The crust is 1 1/4 pounds of ground beef and 2 1/2 ounces of chorizo with 2 eggs, mixed and baked.
