I am very impressed. I am planning for some weekend guests, and trying to come up with meals that allow me to stay on track and not be real obvious about eating differently. Adding to the challenge is the fact that one guest is vegetarian. I've got several ideas. I'm thinking about doing eggplant parmesan, serving pasta on the side. A tiny serving of Dreamfield's pasta would be ok for me. I'm going to experiment with using almond flour or flaxseed meal for the breading on the eggplant.

Sounds good Nancy Lu. What I did was covered my plate with salad, dressing on the side for everyone, added my meat, some cheese and bacon bits sprinkled on the top and let them enjoy their potatoes and corn. My plate was full, so nobody said much. I was happy and they so were they. They didn't mind relieving me of the leftover bread, potatoes, corn and meat with BARBQ sauce. I'm glad the temptations are gone too! win win situation. Can't believe I don't really care about the starchy sugary stuff..Hope it last forever!
