Beautiful, gorgeous day today with temps in the mid-60's after a light frost last night! Pretty chilly when I headed out this AM.

I had a volunteer thing at church this AM, so went from there to the consignment place - where I picked up my first check for some things I sold! - and then to the gym for an elliptical workout, then off to a health food store for more unsweetened coconut for some cookie recipes I'm trying out today.

The early part of this week was supposed to be a washout, with rain every day. The rain came, but it stayed away every morning so the doggies and I could get our full walk in. Pretty dreary otherwise, but today's sunshine makes up for all that. It just feels like spring is just about here.....BUT.....this weekend will be back to winter, Will have time to do lots of indoor projects....a very mixed "blessing."

WOW....I'm just picking up the sound on "The Talk" and Sharon Osbourne, one of the co-hosts, who's been on Atkins lately, is talking about it AND Collette, the Atkins nutritionist is also on.

Hard to believe you had a frost! Of course it is hard for me to believe we are getting snow flurries tomorrow. I did not know Sharon Osbourne was on Atkins - I knew she had a lap band at one time and had gained some weigh back. Wonder if that is how Kelly lost all that weight? Enjoy those new recipes. At least one of our hubbies is getting to eat something new.

Hi Sandy..so glad you could get your walk in..I have been seeing her commercials alot lately..she is looking good too..I looked out just now and we have big snow flakes..but its not suppose to be alot..just mostly cold this weekend...Have fun making those cookies...:O)

Nope...it is gone! I had this nice comment, then had some kind of malfunction & now it is gone. Anyhoooo, glad you got your walk in, (know I said that), oh well...the rest is about cookies...LOL, go figure, probably because I love cookies. What are you trying? Oh, yeah, I remember, I typed something about trying to find unsweetened coconut & how expensive the only kind I found was, because it is organic yet too. Why is that?

Buffy, Bren & GG.....The spot on The Talk was mostly a commercial for the entire line of Atkins products (go figure!) as well as providing answers to the common misperceptions about Atkins/low-carb diets. I missed the first part of the show, so it may have been better than what I'm indicating. As for the cookies.....well, they are wonderful!!!!!! Found a guy on YouTube showing a low carb recipe for low-carb chewy pecan cookies and decided to give them a try. I didn't have molasses at home and really didn't want to buy any, so I subbed Torani s/f caramel syrup for that. I made up a batch with the recipe's low-carb baking mix (which I did have) and another batch subbing that out for some almond meal. LOVE both kinds, even though they have a different flavor/texture. Making up 24 cookies, each cookie runs 104-112 calories and 2.2-3.2 net carbs....and that includes adding a .5 carb for each serving of Splenda, as well. Some recipes take the zero carbs from the packet, but I'm not convinced that that's a true picture when one uses larger measures of it. As far as the unsweetened coconut is concerned.....LOVE that too!!!! The one place I found it is in a health food store (read, "expensive") and it's the same price for organic or non-organic. But I really like the taste of it in the cookies....can't wait to see if I can put it in anything else and like it as well.
